What exactly are random units? Any unit from any age? If so, why would I want bronze units on SA Jupiter Moon?

Random units of your age, or the age of the building. It could be any kind of unit type (light/ranged/heavy/ext).
The fanbase wiki is run by players, the people who updated the wiki the most sort of quit on it. There are some other better guides online.

In most cases random unit are from the building's age.
For unit in the inventory the reference age is your current age.
I think there is a small difference in the pool of unit selection.
For some ages where there are mercenary units (example Industrial age) those are included, but I'm not sure it applies to all building.
The Knight pavilion does include mercenaries.
Note: for Alcatraz the pool is limited to the barracks currently present in the city.
