They are all producing supplies or some of them are producing gold too?

Production buildings produce resources such as wine or stone but not money(gold). Resources can be used to unlock features and to negociate for peiced of land on the map, instead of fighting. Note, You need to conquer a resource on your map in order to make use of the production buildings.

Gold can be generated by residential buildings.

Actually, production buildings produce supplies, residential buildings produce coins and goods buildings produce resources such as wine and stone.
You can see the different category names by hovering over the different sections in the building menu.
