Goods building, which is local and which isn't?

Wine isn't local, while stone and lumber is. Ebony is local, while limestone isn't. Local meaning I don't have to conquer a land to be able to produce it.

What about wool, gemstone and iron?

First of all you have to understand that having a province with lumber or anything else is not needed to produce the goods. But you will get much more goods when you have for example a lumber region. You will get 5-6 lumber in 4 hours, if you want wool you will only get 1 wool in 4 hours because you don't a province with sheep/wool. Does this answer your question?
So you can get all the goods as long you have researched the buildings ;) But the rate at which you receive goods depends on the conquered provinces that provide you with the goods resources.
